I had the most amazing day hanging out, shooting, eating and meeting new people at the Highlands Merchant. I love the ethos behind this cafe in the Southern Highlands. Chef Rachel focuses on creating simple, seasonal produce with as much local food as possible. She also aims to produce as minimal food waste by creative menu planning and using all aspects of the fresh produce. This style of menu planning can only be made possible by having a great working relationship with owner Lisa. Lisa’s love for good food and beautiful interiors shows in every aspect of the cafe.
